Seared Scallops with Braised Cabbage & Greens

Though some kiddos may enjoy this, we suggest this dish as a simple entertaining evening or date night FEAST!

Seared Scallops with Braised Cabbage & Greens (Serves 4-6, Scallops can be chosen based on amount desired and size)

Instructions & Ingredients:

BRAISED CABBAGE:
4 Thick Cut Slices of Applewood Smoked Bacon
1 Tb. Butter
2-3 Large Garlic Cloves (based on preference of how garlicky you want it to be!)
1 – Small Yellow Onion – Roughly Chopped
1 – Medium to Large Red Cabbage – Roughly Chopped
1/2 C. Broth

In a hot skillet cook bacon until cooked thoroughly. Place cooked bacon aside on plate and pour bacon fat drippings in bowl with sealable lid to keep on hand. On medium heat add butter and garlic. Let happiness soak up and add chopped onions. As onions begin to cook through and become translucent, add chopped red cabbage. As cabbage begins to cook, prepare dressing below. Continue to stir cabbage and add broth. Cook slowly until al dente, a nice crunch.

SALAD & SIMPLE DRESSING:
1 Tb. – Chopped Shallot
1 Tb. – Dijon Mustard
3 Tb. – Champagne Vinegar
1/2 C. Clover Cream
2 C. Mixed Greens (any pea shoots, arugula, power greens or micros greens you wish to mix together)

Add all shallots, mustard and vinegar into a small bowl or salad blender. Slowing add cream and whisk to emulsify and bind together. Wait to dress at very last minute for service.

SCALLOPS:
2 Tb. Olive Oil or Grapeseed Oil
** It is suggested to purchase large or med-large sized scallops. Pending size you can serve 2-3 as main protein.

Place scallops on paper towel to dry off any excess moisture so searing can be achieved easily. Salt and pepper scallops and set aside. In a large skillet, bring oil to a high heat. Turn down slightly and add scallops. Searing should take a few minutes on either size, pending on size.

PLATING:
Chop bacon. Place braised cabbage on large Family Style plate. Sprinkle bacon into dressed greens salad and place aside cabbage. Place scallops on top of cabbage and sprinkle with bacon to make super fancy…ha! Grub a dub dub…
